Green Revitaliser Recipe

  Serves 1  Ingredients 1 egg Handful rocket and  handful of spinach 1/2 Lebanese cucumber, diced 2 Kale leaves, stripped off the stem and thinly sliced Tsp coconut oil Himalayan or Celtic sea salt Peace love granola Green super-kraut (sauerkraut) 1/2 lemon Drizzle extra virgin olive oil Small handful of nuts (I used raw walnuts and roasted almonds and cashews ) Chilli flakes (optional).   Method Combine rocket, spinach, cucumber in a bowl, drizzle over olive oil and squeeze over the lemon, being careful to catch the pips. Heat coconut oil in small pan until really hot. Add the Kale to the hot pan. Season with salt and cook on high for 3-4 minutes, stirring continuously. You can add the chilli if you want it, stir then remove from heat. Add kale to salad. Sprinkle over the nuts and super-kraut Poach egg in simmering water until cooked to how you like it. Immune Boosting Japanese Soba Noodle Salad

  This salad is a spin on a recipe I found in the paper a few years ago. What makes it so deliciously good for your immune system are the fresh vegetables full of fresh vitamins and minerals, the buckwheat noodles that are easier on your digestive system than wheat bread, the energy giving protein in the tuna and the good fats and vitamin c in the dressing. There is, however, one delicious secret ingredient too – umeboshi plum paste! This amazing Japanese condiment is a purple puree of the dried umeboshi plum that is said to help stave off colds and other winter sicknesses. It has an intense tangy and salty taste that makes the salad taste amazing and puts this simple salad high on the list for keeping you in good health.
