WARMING AYURVEDA KALE RECIPE

    INGREDIENTS 1 small bunch kale, washed and finely chopped 1 small onion, diced 4 cloves garlic, minced 1-inch piece of fresh ginger, minced 2 Tbsp pine nuts 1 cup basmati rice cooked 2 Tbsp each toasted sesame oil & tamari (soy sauce) 1 tsp Himalayan salt 1/2 tsp maple syrup or honey 1 tbsp hemp seeds 1/2 lemon squeezed fresh pepper to taste   METHOD Put a large pot of water to boil. Add a some salt, and rice. Cook until tender (check it, may take 10 to 20 minutes). Drain and rinse in hot water to remove excess starch and set aside.   While rice is cooking, heat up 1 tablespoon of olive oil in a large pan. Add the onions and sauté until soft. Add another drizzle of olive oil plus the garlic, ginger and kale. Stir together and sauté until kale is soft and fragrant. Vegan Pesto Dip

  INGREDIENTS 1 and 1/2 cups fresh basil 1/3 cup cold pressed olive oil 1 cup pine nuts (or any other nuts can be used) 5 cloves garlic 3/4 tsp himalayan or sea salt 1/2 tsp black pepper   Method Combine all ingredients in food processor on medium to low speed, until nuts are ground. Pesto should still have texture and not be completely smooth. Add more salt and pepper to taste. You could also add 1/2 cup of rehydrated sun dried tomatoes. You can keep it for at least a few days in a sealed container in the fridge. Pistachio Cranberry Bites

  Ingredients 1 and 1/2 cups desiccated coconut 1/2 cup macadamias 2 tablespoons maple syrup 1/2 teaspoon concentrated natural vanilla extract 1/3 cup natural pistachios 1/3 cup dried cranberries extra desiccated coconut to roll in   Method Place the coconut, macadamias, maple and vanilla into your food processor and pulse until the mixture is smooth, broken down and sticking together. Stir the pistachios and cranberries into the coconut mix. Use your hands to firmly press and shape the mixture into balls. RAW SWEET POTATO SALAD

      Ingredients   Sweet Potato Mix 1 medium to large Sweet Potato peeled and cut into tiny cubes 1 large Broccoli Head cut into small pieces 350g of leafy greens – your choice 1 large spring onion thinly sliced   Satay Sauce 4 cups of raw peanuts half cup of soy sauce 1/4 cup olive oil 1/4 cup of lemon juice 1 piece of ginger about the size of 2 garlic cloves together 1 garlic clove 1/4 cup water 1 tbsp of maple, agave syrup or honey   Method Prepare all sweet potato mix ingredients and place in large bowl. Place all ingredients of sauce in blender and blend well! Add more peanuts or water to get the consistency you would like. A runnier sauce is best for this dish Add more soy or garlic to your taste.       MUSHROOM FILLING INGREDIENTS 2 cups of cashews 3 carrots chopped roughly 1 medium red onion copped finely 1/4 dates or raisins 1 teaspoon of honey or maple syrup 1-2 tablespoons of olive oil 1/4 bunch of fresh dill 1 teaspoon of sea salt 1 teaspoon of balsamic vinegar   OTHER INGREDIENTS 4 to 8 fresh Portobello mushrooms with stems out, to be filled 2 fresh tomatoes to add on top Fresh kale leaves to serve on 1 cup of pine nuts to garnish   METHOD Blend all fillings ingredients in a blender or food processor until a thick smooth consistency. Fill mushroom with filling, place tomato slice on top and garnish with pine nuts. BROCCOLI SALAD

      Ingredients 2 to 3 cups broccoli florets cut into small pieces. 1 small red onion finely chopped 1 cup raisins or sultanas 1/2 cup almond flakes or any finely chopped nut 1/2 cup sunflower seeds Place all ingredients in a bowl and then add dressing and mix through   Dressing 1 cup raw cashews, soaked 2+ hours 1/4 cup fresh lemon juice 2 Tbsp Cold-Press Olive Oil 2 Tbsp raw apple cider vinegar 3/4 cup water 2 Tbsp shallot or onion 1 clove garlic 2 Tbsp raw agave or maple syrup 2 Tbsp mild mustard 1/4 tsp sea salt Combine all dressing in ingredients in blender until smooth.
