kale and rice


1 small bunch kale, washed and finely chopped
1 small onion, diced
4 cloves garlic, minced
1-inch piece of fresh ginger, minced
2 Tbsp pine nuts
1 cup basmati rice cooked
2 Tbsp each toasted sesame oil & tamari (soy sauce)
1 tsp Himalayan salt
1/2 tsp maple syrup or honey
1 tbsp hemp seeds
1/2 lemon squeezed
fresh pepper to taste



Put a large pot of water to boil. Add a some salt, and rice. Cook until tender (check it, may take 10 to 20 minutes). Drain and rinse in hot water to remove excess starch and set aside.


While rice is cooking, heat up 1 tablespoon of olive oil in a large pan. Add the onions and sauté until soft. Add another drizzle of olive oil plus the garlic, ginger and kale. Stir together and sauté until kale is soft and fragrant. Cover with a lid and if it starts to dry out add a little water to keep it juicy. When the rice is done, serve on plate. Drizzle the kale with the sesame oil, tamari and fresh lemon juice, maple/honey and ground pepper and toss until all covered. Serve on plate next to rice, topped with lightly toasted pine nuts, olives. Sprinkle hemp seeds over entire dish. Enjoy warm!
