RAW SWEET POTATO SALAD

      Ingredients   Sweet Potato Mix 1 medium to large Sweet Potato peeled and cut into tiny cubes 1 large Broccoli Head cut into small pieces 350g of leafy greens – your choice 1 large spring onion thinly sliced   Satay Sauce 4 cups of raw peanuts half cup of soy sauce 1/4 cup olive oil 1/4 cup of lemon juice 1 piece of ginger about the size of 2 garlic cloves together 1 garlic clove 1/4 cup water 1 tbsp of maple, agave syrup or honey   Method Prepare all sweet potato mix ingredients and place in large bowl. Place all ingredients of sauce in blender and blend well! Add more peanuts or water to get the consistency you would like. A runnier sauce is best for this dish Add more soy or garlic to your taste. Portobello Surprise

      MUSHROOM FILLING INGREDIENTS 2 cups of cashews 3 carrots chopped roughly 1 medium red onion copped finely 1/4 dates or raisins 1 teaspoon of honey or maple syrup 1-2 tablespoons of olive oil 1/4 bunch of fresh dill 1 teaspoon of sea salt 1 teaspoon of balsamic vinegar   OTHER INGREDIENTS 4 to 8 fresh Portobello mushrooms with stems out, to be filled 2 fresh tomatoes to add on top Fresh kale leaves to serve on 1 cup of pine nuts to garnish   METHOD Blend all fillings ingredients in a blender or food processor until a thick smooth consistency. Fill mushroom with filling, place tomato slice on top and garnish with pine nuts. BROCCOLI SALAD

      Ingredients 2 to 3 cups broccoli florets cut into small pieces. 1 small red onion finely chopped 1 cup raisins or sultanas 1/2 cup almond flakes or any finely chopped nut 1/2 cup sunflower seeds Place all ingredients in a bowl and then add dressing and mix through   Dressing 1 cup raw cashews, soaked 2+ hours 1/4 cup fresh lemon juice 2 Tbsp Cold-Press Olive Oil 2 Tbsp raw apple cider vinegar 3/4 cup water 2 Tbsp shallot or onion 1 clove garlic 2 Tbsp raw agave or maple syrup 2 Tbsp mild mustard 1/4 tsp sea salt Combine all dressing in ingredients in blender until smooth.   This Raw Mango Curry soup provides you with vitamin A and great levels of beta carotene from the carrots, to help cleanse the blood, liver and may help protect you from cancer. Full of of anti-inflammatory and antioxidants, the ginger and turmeric work together to keep your immune system full of strength and good health.   STOCK – juice the following stock ingredients together in juicer. 1 1/2 cup carrot 1 yellow capsicum 1 (1-inch) chunk ginger, peeled 1 (1-inch) piece turmeric SOUP 1 large mango, pitted 1 tablespoon coconut butter 2 tablespoons miso 2 teaspoons curry powder 1⁄4 teaspoon cayenne sea salt, to taste diced avocado 1/4 cup micro greens or coriander METHOD Blend stock with other ingredients except avocado & micro-greens.
