STUFFED AVOCADOS WITH CHICKEN

  Stuffed Avocados With Chicken   Ingredients: 1 Cup of Chicken breast chopped into cubes 1 cup of Chicken broth 1 Avocado, halved and pitted 1/4 cup of diced yellow onion Pinch of pink salt Freshly ground pepper 1 head of garlic 1 Tablespoon of Hot sauce, I used Sriracha. 1 Tablespoon of basil Cheese, to sprinkle over, I used sharp cheddar. Method: Heat a skillet over medium heat on stove top. Saute chicken until golden brown, add onion and cook over medium heat for 8 minutes. Add hot sauce and chicken broth and simmer for about 20 minutes on low heat. Preheat oven on 375F / 190 C, Place avocado halves into baking dish and fill with chicken mixture and shredded cheese. Place in oven and bake for 10 to 12 minutes. CARROT TOP CREAMY PESTO

      Ingredients: 1 good handful carrot top leaves without stems 1-2 garlic cloves- do you like it garlicky? A  few squirts of fresh lemon, add more for a tangy taste! 2-3 tablespoons EVOO Salt to taste 1 handful soaked Pumpkin seeds 1-2 tablespoons Hemp seeds Method: Blend all in a food processor, you may add a dash of oil or water if its too thick. Enjoy on tomatoes, salads, fish, chicken or with carrots! I have really enjoyed it with some seasoned sea bass this week. TROPICAL PARADISE OVERNIGHT OATS

  Serves: 1 Vegan & raw. Gluten, dairy and processed sugar free. Use organic ingredients if possible.   Ingredients: 1/2 cup coconut milk 1/2 cup almond milk (or use 1 cup light coconut milk) 1 cup gluten-free rolled oats 1/4 cup defrosted frozen mango 1/4 teaspoon fresh lime zest 1/2 teaspoon fresh lime juice 2 tablespoons toasted coconut chips or grated coconut 1.5 tablespoon raw agave syrup/coconut nectar or honey (not vegan but totally awesome) or to taste 1/8 teaspoon cardamom powder or to taste Pinch sea salt Pinch cayenne pepper (optional) Fresh chopped mango and banana or pineapple for topping   Procedure Add the nut milks, rolled oats, sweetener of your choice, cardamom, salt and cayenne to a bowl or a jar and mix until well combined.
